A tailor's clapper is used to get crisp, flat seams and creases while sewing. A wooden clapper absorbs the steam and traps the heat against your fabric.
First, press your seam to meld your stitches to the fabric. Next, press your seam allowances as directed (open or to one side) using lots of steam. Then, place the clapper on top of the seam and leave it there until cooled (5-7 seconds).
I use the large clapper for everyday sewing in my studio, and I like the small one for when I travel.
